Cozy Cold Weather Lentil Soup

Ingredients
  

  • 2 cups lentils
  • 16 cups vegetable broth or water
  • 6 cloves garlic
  • 1 chopped onion
  • 1 bell pepper
  • 1 cup spinach
  • 1 can tomato puree
  • 1 tablespoon turmeric
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 2 tablespoon oregano
  • 2 bay leaves
  • salt and pepper to taste

Instructions
 

  • Rinse the lentils before cooking.
    Transfer the lentils and all of the other ingredients (besides the salt) into one large pot and cook over the stove on high until the water starts to boil.
    Once the water has boiled, cover the pot and change the heat to low and cook for another 30-40 minutes.
    Add the salt towards the end. Adding the salt too early can make the lentils become tough.
    That’s it! They’re super easy, just take some time. This recipe fed my whole family of four for dinner and then again for lunch the next day, so if it is too much, just half the recipe ?
