Vegan Donut Recipe (Peanut Butter & Chocolate)

Ingredients
  

Donut Ingredients

  • 1 ⅓ cup oat flour
  • cup coconut sugar
  • 1 ½ teaspoon baking powder
  • dash of salt
  • 3 tablespoon peanut butter
  • 3 tablespoon melted coconut oil
  • 1 teaspoon vanilla
  • ¾ cup dairy free milk

Glaze Ingredients

  • cup melted chocolate
  • 3 tablespoon peanut butter
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup

Instructions
 

  • Start by combining the dry ingredients to a bowl- the oat flour, sugar, baking powder, and salt. Mix those well.
  • In a separate bowl, combine the wet ingredients- the peanut butter, melted coconut oil, vanilla, and milk. Mix those well.
  • Add the wet ingredients to the dry and combine.
  • Transfer the batter from the bowl to a large piping bag.
  • Cut the end of the piping bag with scissors.
  • Pipe the donut batter into a donut mold. (Grease the pan beforehand if you are not using a nonstick pan).
  • Bake the donuts for 12-14 minutes at 350*F/ 180*C.
  • While the donuts are baking, combine the glaze ingredients in a bowl.
  • When the donuts are done baking, give them 20-30 minutes to cool before removing them from the mold so that they can set and they don't fall apart. Then set them on a cooling rack and allow them to cool for a few more minutes.
  • Once the donuts have cooled, take each one and dip it into the chocolate glaze.
  • Set the donuts back on the cooling rack until the chocolate hardens and enjoy!
  • The donuts definitely taste best when eaten that same day! But they last for 3-5 days- store in the fridge in an airtight container.
