Cookie Dough Truffles Recipe

These chocolate chip cookie dough truffles are the perfect healthy, no-bake dessert! They are vegan & gluten free.

Ingredients
  

  • 1 cup peanut butter
  • ½ cup coconut flour
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • ½ cup chocolate chips

Instructions
 

  • To a large bowl, add the peanut butter, coconut flour, maple, vanilla, and salt. Combine those ingredients well.
  • Fold in the chocolate chips and mix them in.
  • Scoop up a small amount of cookie dough into your hands and roll into a ball. I made mine about 1 inch in diameter.
  • Place the cookie dough bites into a plate or bowl. Repeat this until you run out of cookie dough.
  • If you make the bites 1 inch in diameter, you should get 12 bites.
  • I suggest storing them in a closed container in room temperature, so that the chocolate can be softer when you snack on them.
