Delicious millionaire shortbread bars made healthier. These bars have three layers- a coconut crust, a caramel filling, and dark chocolate topping. They are vegan and gluten free.
In a large bowl, combine the coconut flour, maple syrup, coconut oil (make sure it is melted and liquid when you add it in. Microwave it for 30-40 seconds if it is not).
Also add the vanilla and salt.
Mix well, then add the crust to your pan.
Use your hands to spread evenly.
Caramel Filling Directions
Add all of the caramel filling ingredients to a food processor. *Make sure that you either soak the dates in water overnight, or soak them in hot water for 20-30 minutes prior to using. This will ensure that they are soft and easy to blend.
Blend all of your ingredients together in the food processor.
Then spread the caramel layer evenly on top of the crust.
Chocolate Topping Directions
To a bowl, add the melted chocolate and coconut oil.
Mix them together and pour on top of the caramel filling.
Refrigerate until the chocolate hardens, cut up your bars and enjoy!
