This recipe is for the blueberry lovers! These vegan blueberry waffles are light and fluffy and topped with a delicious homemade blueberry sauce.

Ingredients
  

Waffle Ingredients

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 cup dairy free milk
  • 1 tablespoon coconut oil
  • ¼ teaspoon vanilla
  • ¾ cup blueberries

Sauce Ingredients

  • 1 cup frozen blueberries
  • 1 tablespoon water use more if you are not using frozen blueberries
  • ¼ cup sugar
  • 1 teaspoon corn starch
  • dash of salt
  • 1 teaspoon zest of a lemon
  • ¼ teaspoon vanilla

Instructions
 

  • To a large bowl, first combine the flour, baking powder, and sugar.
  • Mix those well, then add the milk, coconut oil, and vanilla.
  • Combine all of the ingredients, then fold in the blueberries.
  • Turn on your waffle maker and wait for it to heat up.
  • Then add a few tablespoons of batter for each waffle and cook until your waffle is golden.
  • Repeat for all of the waffles.
  • To make the blueberry sauce, add the blueberries to a pan over medium heat.
  • Add the sugar, water, corn starch, and salt.
  • Cook for 10-15 minutes, stirring occasionally.
  • Remove from heat. Add the lemon zest and vanilla.
  • Let the blueberry sauce cool, then add to your blueberry waffles.
  • I decided to also add some coconut whipped cream to mine.
