To a large bowl, first combine the flour, baking powder, and sugar.
Mix those well, then add the milk, coconut oil, and vanilla.
Combine all of the ingredients, then fold in the blueberries.
Turn on your waffle maker and wait for it to heat up.
Then add a few tablespoons of batter for each waffle and cook until your waffle is golden.
Repeat for all of the waffles.
To make the blueberry sauce, add the blueberries to a pan over medium heat.
Add the sugar, water, corn starch, and salt.
Cook for 10-15 minutes, stirring occasionally.
Remove from heat. Add the lemon zest and vanilla.
Let the blueberry sauce cool, then add to your blueberry waffles.
I decided to also add some coconut whipped cream to mine.
