Vegan Chocolate Rice Crispy Treats

Ingredients
  

  • 1 cup peanut butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla
  • 3 cups brown rice cereal
  • ½ cup melted chocolate

Instructions
 

  • Combine the peanut butter, maple syrup, and vanilla in a bowl.
  • Blend until smooth & then pop them in the microwave for about 30 seconds.
  • Add the brown rice cereal to the peanut butter mix and combine.
  • Transfer this mixture to a small square or rectangular baking sheet and cool in the refrigerator for 30 minutes.
  • After the rice crispy treats have cooled, cut them into rectangular pieces.
  • Melt the chocolate.
  • Dip the bottom of the treats into chocolate and lay on a baking sheet to cool. Do this until all of the treats have been dipped in chocolate.
  • Add the remaining melted chocolate to a ziplock baggie.
  • Cut off a small corner of the bag and drizzle the remaining chocolate on top of the treats.
  • Refrigerate the treats for at least another 30 minutes, until the chocolate hardens.
