Protein Donuts Recipe

This protein donuts recipe is so delicious and is vegan and gluten free. These donuts make for a great breakfast or healthy dessert.

Ingredients
  

Donut Ingredients

  • 1 cup + 1 tablespoon oat flour 134 grams
  • ¼ cup vanilla protein powder
  • ¼ cup coconut sugar
  • 1 ¼ teaspoon baking powder
  • dash of salt
  • 3 tablespoon peanut butter
  • 2 tablespoon melted coconut oil
  • ¾ cup dairy free milk

Frosting Ingredients

  • ¼ cup creamy peanut butter
  • 2 ½ teaspoon coconut oil
  • 2 teaspoon protein powder
  • 2 teaspoon maple syrup

Chocolate Glaze Ingredients

  • 2 tablespoon chocolate chips
  • ½ teaspoon coconut oil

Instructions
 

  • Start by combining the dry ingredients to a bowl- the oat flour, protein powder, sugar, baking powder, and salt. Mix those well.
  • In a separate bowl, combine the wet ingredients- the peanut butter, melted coconut oil, and milk. Mix those well.
  • Add the wet ingredients to the dry.
  • Transfer the batter to a large piping bag. Cut the end of the piping bag.
  • Pipe the donut batter into a donut mold.
  • Bake the donuts for 15-17 min at 350*F/ 180*C and give them plenty of time to cool.
  • Once the donuts are done baking, combine peanut butter and coconut oil in a bowl and melt them the microwave for 1 minute.
  • Note: use natural creamy peanut butter for this recipe. This is the kind that only contains peanuts and salt as the ingredients. If you use a different type, the consistency will be too thick. You can add more oil to fix this.
  • After the peanut butter and coconut oil have melted, add in the protein powder and maple.
  • Once the donuts have cooled, take each one and dip it into the glaze, then set the donuts on a cooling rack. You can drizzle some melted chocolate on top at this point. Then put the donuts in the fridge until the glaze hardens and enjoy!
  • You can store the donuts in an airtight container in the fridge for 4-5 days. This recipe makes 7-8 donuts.
