Custard Toast (Vegan- No Eggs or Dairy)

The custard toast trend has been all over social media, so I made this vegan, egg-free, and dairy-free version of this delicious breakfast.

Ingredients
  

  • 2 slices of bread
  • cup your fave dairy-free yogurt
  • 2 tablespoon arrowroot powder or cornstarch
  • 1 ½ tablespoon maple syrup add more or less, depending on how sweetened your yogurt is. Mine was unsweetened so I added this much
  • ¼ teaspoon vanilla
  • optional: lemon zest
  • topping: fruit of choice

Instructions
 

  • Whisk the yogurt, arrowroot, maple, zest, and vanilla in a bowl and combine them well.
  • Using your fingers or a spoon, create a well in your bread. Add the custard. Top with berries of choice.
  • Bake the toast in the oven for 20 minutes at 350*F/175*C. (My bread was a thick slice of sourdough, so if you are using a thinner slice or a softer bread, you might want to bake for a little less- until the edges start to become golden and crispy).
  • Remove the toast from the oven, allow 5-10 minutes for it to cool off and the custard to set, then drizzle some more maple syrup and enjoy!
