To a bowl, add all of the ingredients (except the chocolate chunks). Mix everything well until you have a thick dough. Now fold in the chocolate chips/chunks.
Shape the dough into a ball and place it on a baking sheet. Flatten out the top by using your fingers. Top with more chocolate chips.
Note: you could split the cookie into two smaller cookies or make one large one!
Bake the cookie for 10 minutes at 350*F/ 175*C.
Optional: Top with flakey salt & dip in some dairy free milk and enjoy!
