Caramelized Apple Fall Toast

- 2 slices of bread
- 1 apple of choice I used honeycrisp
- 1 tablespoon maple syrup
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- almond butter
- optional: pumpkin seeds
Start by toasting the bread.
Cut the apple into small cubes.
To a pan, add the maple syrup, coconut oil, cinnamon, and vanilla and stir them well.
Add in the apples and cook them for 5-7 minutes, stirring them throughout to make sure they cook on all sides.
You can cook them for more or less time, depending on your preference and how caramelized you want them to be.
Spread almond butter (or other nut butter of choice) on your toast, top with the caramelized apples, and add some pumpkin seeds for some crunch.
