This vegan breakfast bagel is made with avocado and vegan versions of bacon, egg, and cheese. It's easy to make and delicious!

Sandwich Ingredients
- 1 bagel
- ½ avocado
- vegan bacon
- vegan egg Just Egg
- vegan cheese slices
Side Ingredients
- spinach
- mushrooms
- garlic powder
- onion powder
- olive oil
- salt & pepper to taste
Toast the bagel.
Cook the veggie bacon according to the package instructions.
Add the vegan egg to a pan and cook for several minutes. Then flip and cook on the other side.
To assemble the bagel, slice the avocado and add the slices to the bagel.
Top with the vegan egg, vegan cheese, and veggie bacon. Close the bagel and slice it into two.
Spinach and Mushrooms
To create the spinach and mushroom side, add olive oil to a pan. Add the spinach and mushrooms. Then add garlic powder, onion powder, salt and pepper.
Cook the spinach and mushrooms for several minutes until the spinach wilts and darkens in color and the mushrooms have softened.
Add the spinach and mushrooms on the side.
