These Santa hat cheesecake bites taste so delicious and are on the healthy side. Not to mention they are so cute and fun to make!

Equipment

Ingredients
  

Crust Ingredients

  • 2 cups plain cookies
  • 2 tablespoon sugar
  • ½ cup coconut oil
  • ¼ teaspoon vanilla
  • dash of salt

Chocolate Cheesecake Filling Ingredients

  • 7 oz of tofu about ½ box of tofu
  • ½ cup peanut butter
  • ½ cup chocolate chips- melted
  • ¼ cup maple syrup
  • ¼ cup dairy free milk
  • ½ teaspoon vanilla
  • dash of salt

Toppings

  • strawberries
  • vanilla frosting

Instructions
 

  • Start by adding the cookies to the food processor.
  • Pulse until the cookies forms a powder.
  • Next, add in the rest of the crust ingredients and pulse.
  • Line a muffin pan and add about 1 tablespoon of the crust to each muffin cup. Use your finger to pat the crust down. Set aside.
  • Now you are going to create the cheesecake filling.
  • Add all of the filling ingredients to a food processor and blend until you have a creamy consistency.
  • Add the filling to each muffin cup.
  • Refrigerate until the chocolate hardens.
  • Then add some vanilla frosting to a piping bag and frost the top of each chocolate cheesecake bite.
  • Add a strawberry and add a little extra frosting on the tip of the strawberry to form the Santa hat.
  • Your Santa hat cheesecake bites are ready to enjoy!
