Equipment

  • large or medium mixing bowl
  • whisk
  • spatula
  • measuring cups

Ingredients
  

  • 1 cup oat flour 130g
  • 2 tablespoon vegan protein powder
  • 1 tablespoon coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • dash of salt
  • ½ cup canned pumpkin
  • 1 cup dairy free milk
  • 2 tablespoon coconut oil

Instructions
 

  • In a large bowl, mix in all of the ingredients until you get a smooth batter.
  • Grease a pan with coconut oil and add about ¼ cup of batter for each pancake.
  • Cook each pancake for 2-3 minutes on medium heat. Flip and cook for about another minute on the other side.
  • Serve the pumpkin pancakes with some vegan whipped cream, maple syrup, and pecans.
  • This recipe makes about 6-7 pancakes.
