Vegan Chocolate Chip Muffins
A delicious chocolatey breakfast of easy and healthy vegan muffins.

- 1 cup oat flour
- 1 mashed ripe banana
- ½ cup unsweetened almond milk
- 2 tablespoon maple syrup
- 2 tablespoon stevia
- ¼ cup peanut butter
- 1 teaspoon baking powder
- ½ tablespoon baking soda
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla
- Pinch of salt
- vegan chocolate chips or break apart a dark chocolate bar into small pieces
Preheat the oven to 350 degrees Fahrenheit.
In a large bowl, combine your oat flour, stevia, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, mash your ripe banana and add your almond milk, maple syrup, peanut butter, and vanilla.
Slowly (1 cup at a time), and your dry ingredients to the wet until you get a thick batter.
Fold in your chocolate chips or chocolate chunks.
Line a muffin pan with muffin liners and add your batter.
Bake for 25-30 minutes.
