Vegan Chocolate Chip Muffins

Ingredients
  

  • 1 cup oat flour
  • 1 mashed ripe banana
  • ½ cup unsweetened almond milk
  • 2 tablespoon maple syrup
  • 2 tablespoon stevia
  • ¼ cup peanut butter
  • 1 teaspoon baking powder
  • ½ tablespoon baking soda
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla
  • Pinch of salt
  • vegan chocolate chips or break apart a dark chocolate bar into small pieces

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, combine your oat flour, stevia, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, mash your ripe banana and add your almond milk, maple syrup, peanut butter, and vanilla.
  • Slowly (1 cup at a time), and your dry ingredients to the wet until you get a thick batter.
  • Fold in your chocolate chips or chocolate chunks.
  • Line a muffin pan with muffin liners and add your batter.
  • Bake for 25-30 minutes.
