You can't go wrong with the best dessert combination in the world- peanut butter and chocolate! Modified and made healthier with coconut flour and dark chocolate.
In a large bowl, mix the peanut butter, maple syrup, vanilla, coconut flour, and salt.
Form the mixture into balls (about 1 inch in diameter).
In a separate bowl, melt the dark chocolate. It's easiest to break the chocolate into small pieces and then place it in the microwave for 30 second increments until it is fully melted.
Drop each ball into the melted chocolate and roll it around with a fork.
Place the chocolate covered balls on a baking sheet, or any flat plate and refrigerate for at least 30 minutes.
After the chocolate has hardened, they are ready to be eaten!
