This tofu recipe is probably my most used recipe that I make for myself every single week😍 I love adding it to a meal with some veggies, some rice/quinoa, and some delicious sauce. It is the easiest way that I know how to meal prep tofu and it is so delicious! I even got my roomie to start making it, and she's not even vegan🥰⁣

✨Easy Baked Tofu✨⁣
⁣⁣⁣
Ingredients⁣
1 block of firm tofu⁣⁣⁣
3 tbsp corn starch⁣⁣⁣
1 tsp salt⁣⁣⁣
1 1/2 tsp garlic powder⁣⁣⁣
1/2 tsp pepper⁣
optional: sauce of choice⁣
⁣
Directions⁣
Start by draining the water from your tofu and use paper towels or a kitchen towel to press down the tofu and get rid of the excess water. Then cut up the tofu into small cubes. In a bowl, add the corn starch, salt, garlic powder, and pepper and mix them well. Coat each tofu piece with the mixture and then lay it on a baking sheet. Bake your tofu squares for 20 minutes at 400*F. You can stop right there and enjoy the tofu as is and add it to whatever dish you like! You can also dip each tofu cube into a sauce of choice and bake for another 20 minutes. For example, in the video I was making the tofu for a Thai inspired Buddha bowl, so I dipped the tofu in some delicious Thai sauce😋 *Keep in mind that this makes a few portions. Feel free to cut the recipe down if you don't need that much🤗

🍫Chocolate Smoothie Bowl🍫⁣

Ingredients⁣
2 frozen bananas⁣
1 handful of frozen spinach⁣
1/2 medium avocado⁣
1 scoop chocolate protein powder⁣
2 tbsp cacao powder⁣
2 dates⁣
1 tbsp hemp seeds⁣
1 tbsp chia seeds⁣
dash of vanilla⁣
dairy free milk (as needed)⁣

Directions⁣
Place all of the smoothie ingredients in a blender and blend until everything is nice and smooth. I try to add as little milk as possible, to keep the smoothie bowl super thick. You can add a splash at a time to help the smoothie blend easier. Once your smoothie is done, transfer it to a bowl and top with @kaysnaturals cookie bites, strawberries, and coconut shreds. Enjoy🥰⁣

This caramelized banana toast is such a delicious breakfast recipe😋 I made it using my favorite gluten free bread from @kimandjakesglutenfree (#sponsored). ✨Caramelized Banana Toast✨⁣

Ingredients⁣
2 slices @kimandjakesglutenfree Hearty Loaf⁣
1 banana⁣
1 tbsp coconut oil⁣
1 tbsp maple syrup⁣
1/4 tsp cinnamon⁣
1/4 tsp vanilla⁣
peanut butter to spread on toast⁣
⁣
Directions⁣
To a pan, add the coconut oil, maple syrup, cinnamon and vanilla and stir them together. Slice the banana and place each slice on the pan. Cook for about 3-5 minutes, then flip. Cook the other side for another 3-5 minutes (depending on how caramelized you want them). Slice and toast the bread. Then add peanut butter, and finally top with the caramelized banana slices. I also added some coconut flakes to mine. Enjoy🥰

🍪Vegan Peanut Butter Chocolate Chip Cookies🍪⁣
⁣
Ingredients⁣
1 cup peanut butter⁣
3/4 cup flour⁣
1 cup sugar⁣
1/4 cup dairy free milk⁣
1 tsp baking soda⁣
1/4 tsp salt⁣
1/2 cup chocolate chips⁣
⁣
Directions⁣
Combine all of the ingredients in a large bowl. Form the batter into balls and place on a baking sheet. Pat the top of each cookie gently. Bake for 10 minutes at 350*F/176*Celsius😋

1/2 cup shredded coconut⁣
1/3 cup maple syrup⁣
1/3 cup peanut butter⁣
1/4 tsp vanilla⁣

Directions⁣
Start by chopping the almonds, pepitas, hazelnuts, blueberries, cherries, and pistachios. You can use a knife or you can pulse them slightly in a blender. Don't chop them too finely, just enough so that they are easier to roll into balls. Set the chopped nuts and fruit aside. In a separate bowl, microwave the peanut butter, maple syrup, vanilla, and salt for about one minute, and mix them well. Add the chopped nuts and fruit to the melted peanut butter and maple syrup mix and combine everything well. Roll into balls and refrigerate for a few hours. Enjoy😋⁣
